Ingredients
- Crust
- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
- Filling
- 2 cups powdered sugar
- 1/2 cup butter, softened
- 3 tablespoons heavy cream
- 1 teaspoon vanilla
- 1 cup sweetened shredded coconut
- Whipped Topping
- 1 tub whipped topping
- 1 tablespoon powdered sugar
- 1 (14-ounce) can crushed pineapple, including juices

Preheat oven to 325 degrees F.

In a bowl, combine graham cracker crumbs and butter, mix until combined. Press into the bottom of a 8x8 baking dish. Bake in the oven for 10 minutes, and then cool completely on a rack.

Meanwhile, combine all filling ingredients with a mixer and gently spread over cooled crust. Cover with plastic wrap and refrigerate while preparing the topping.

In a large bowl, combine whipped topping with powdered sugar and crushed pineapple. Spread over the set filling. Cover again and refrigerate until ready to serve.

Hmmmm...Graham crackers and pineapple isn't something I'd imagine would go together but this recipe sounds so dreamy it has to be good. I would think with using the crushed pineapple juices and all it would too runny but it looks like it holds up pretty good and almost like a cheesecake texture. Yum! I wonder how it would turn out if a different fruit was used instead of the pineapple...I bet lime would go great with the coconut!

Pineapple and coconut make a wonderful Spring/Summer dessert. It's great that it's made in a small 8" x 8" pan. Most dessert bars/cakes are made in 13" x 9" pans which make a lot for a small family. I like graham cracker crusts but have never made one from scratch. I could probably buy a graham cracker pie crust and just make the filling.

This looks like a great, light, summer recipe! I love coconut and pineapple together. With the graham cracker crust is seems almost like a cheese cake but on the lighter side. I love recipes with graham cracker crumbs but I usually have to find a substitute if they contain high fructose corn syrup. Does anyone have a brand they like to use that omits that ingredient?
