Cupid's Ice Cream Sandwiches
"If that’s your cup of tea, I’ve got something to cozy up your Valentine’s Day even more – Cupid’s Ice Cream Sandwiches! In this post, I’ve created a step-by-step photo guide to show you how to make them. It’s easier than you think. This recipe yields 16 2.5-inch heart-shaped ice cream sandwiches or 12 2.5-inch ice cream sandwiches and 2 6-inch ones. I know that’s a lot. But since you’ve decided to go for it, might as well make enough for later. Just wrap each sandwich in foil and freeze them."
NotesYou could use a larger heart-shaped cookie cutter for different sized ice cream sandwiches. Optionally, roll the side of each sandwich into sprinkles before freezing.

Ingredients
- 1 3⁄4 cups all-purpose flour
- 3⁄4 cup cocoa powder
- 3⁄4 cup butter, softened
- 2⁄3 cup sugar
- 2 large eggs
- 1⁄2 teaspoon vanilla extract
- 2 pints ice cream, softened (any flavor)

Combine all-purpose flour and cocoa powder.

In a large bowl, combine softened butter and sugar and beat with a mixer on high speed until fluffy.

Beat in eggs and vanilla extract until well blended.

Reduce the mixer speed to low and beat in the flour mixture.

Divide dough in half, wrap with plastic wrap and refrigerate for an hour.

Line 9 x13-inch baking pan with plastic wrap. Transfer ice cream from its package to the baking pan and smooth ice cream evenly into pan with a spoon. Cover with plastic wrap and place it in your freezer.
