This is such and easy recipe, and a great way to kick off Fall and the onset of pumpkin season. For me there is always something so special about anything "mini" that I can bake in my cupcake pans. The flavors in these Mini Pumpkin Cheesecakes are pretty straight forward but the ginger snap crust takes to a whole new level. Absolutely Great!
