Lemon Puppy Chow

Don't get us wrong. We are BIG fans of regular puppy chow, but who doesn't love a creative take on a classic recipe? That's what we've done with this delicious lemon puppy chow. This snack takes everything you love about chocolate puppy chow (aka muddy buddies) and transforms it into a snack that is bright, lemony, and completely irresistible. It's like lemon bars in snack form!
This recipe uses white chocolate and lemon curd to get the perfect balance of sweet and tart. These ingredients are simple to find, and yet they give this after school snack an elegant twist that will please everyone in the family. Enjoy!

Ingredients
- 1 box of Chex cereal
- 1 cup white chocolate chips
- 1/4 cup lemon curd
- 1/4 cup butter
- 1 teaspoon lemon juice
- 2 cups powdered sugar
- lemon zest for garnish
Lemon Puppy Chow
Instructions

In a small saucepan over medium heat, melt white chocolate, butter, lemon curd, and lemon juice.

Pour cereal into a large bowl and pour melted lemon mixture over cereal.

Cool slightly; then add the powdered sugar and stir to coat.

Spread out on cookie sheet to cool. Sprinkle with lemon zest.

What a funny name for a dessert, right? I like that you can make up this treat and use it as an appetizer at a party. I can think of a ton of people who would like to chow down on this treat while I am finishing up burgers and brats. I think they will find this lemony treat a refreshing change from the usual things I serve.

As much as I love standard puppy chow, I think this recipe is the best I've ever tried! The lemon is subtle but adds a depth of flavor!

This tasted just like lemon Fruity Pebbles or Froot Loops. It took me right back to childhood. Yum!

When I first heard of this, I thought the chex mix would get soggy, but it doesn't at all! These taste a LOT like those lemon Girl Scout cookies. Love!

I really enjoy lemon-flavored desserts and this has just the right amount of lemon in it to make it perfect for the summer season. It's nice and light and would make a great party snack.

Wow! I've only had peanut butter and chocolate puppy chow - I would have never thought of lemon. This seems like it would be light, sweet, and zesty. It may even be nice to top on frozen yogurt!
