- 1 box yellow cake mix
- 2 eggs
- 1/3 cup oil
- Topping:
- 1 can pineapple chunks, drained
- 12 maraschino cherries
- 1/2 stick of butter
- 2/3 cup light brown sugar

Instructions

Preheat oven to 350 degrees F. Lightly spray muffin pan with cooking spray.

Prepare cake mix according to package directions.

In a glass measuring cup, melt butter in the microwave. Add brown sugar and stir to combine.

In the bottom of each muffin tin, pour equal amounts of sugar mixture.

Pour pineapple chunks over the sugar mixture. Press a cherry into the center of each cup.

Divide prepared cake batter evenly among each muffin cup.

Bake for 20-25 minutes until tops are golden and spring back when touched.

Carefully run a knife along the edge of each cup. Using pot holders invert the muffin tray onto a platter and tap gently. The mini-cakes will fall right out.

Eat while warm, room temperature or even chilled.

For all of those Alton Brown fans, his show on pineapple upside cake thrust me into the arena of said dessert. His recipe was not complicated at all, but I like this mini tin version. Thanks for the idea of presenting these little cakes of yummy pineapple delight.

Wow! These mini pineapple upsides down "cup" cakes look delicious. My Dad was the best at making Pineapple cake, a different version. My Mom was the one that loved pineapple so much he would make it for her. Grandma made her pineapple cake like this and no matter which recipe I loved it. I like at there is no cutting involved here, just grab and go.

My mother used to make Pineapple upside down cake and I so want to recreate it with this mini version. I'm going to make it in a large muffin tin and use pineapple rings to make it look more like mom's. I don't know exactly how many it will make or how much I will need to adjust the baking time, but I'm up to the challenge and armed with this recipe I believe I can do it. Wish me luck.
