Paleo Blueberry Muffins Recipe

Ingredients
- 3 cups almond flour
- 1 teaspoon baking soda
- ½ cup ghee, melted
- 3 eggs
- 1/2 cup raw honey
- 1 cup blueberries
- 1 tablespoon vanilla extract

Preheat oven to 350F.

Combine the almond flour, baking soda, ghee, eggs, raw honey, and vanilla extract together and mix well.

Lastly, fold in the blueberries.

Line a muffin pan with muffin liners. Spoon the mixture into the muffin pan (to around 3/4 full) and level out with a spoon.

Bake for 18-20 minutes until a toothpick comes out clean when you insert it into a muffin.

I really want to try these blueberry muffins. I love to have these kinds of muffins for breakfast when I am in a rush. Do you think I can use wheat flour to make these muffins since we have an almond allergy in the home? I want to make up a big batch and freeze some for super busy mornings. I can toss one in the microwave with a wet paper towel and steam it to keep it moist.
