Raw Coconut Cookies Recipe
"These coconut cookies are super fast to make and eat. These miniature cookies are a bit tricky if you don’t get the ingredient proportions just right (because you’re relying on the coconut oil and the honey to hold everything together). But apart from that, these are super easy and delicious! Oh, and they take 10 minutes to make and then 15 minutes in the fridge (while you relax). This Raw Coconut Cookies Recipe are easy and quick to make not only is it delicious but it's paleo, gluten-free, dairy-free compliant as well."

Ingredients
- 2 Tablespoons coconut oil, melted
- 2 Tablespoons raw honey
- 1/2 cup unsweetened shredded coconut
- 1/2 cup ground almonds or almond flour
- Chocolate chips for topping (optional)

Mix all the ingredients together well.

Using your hands, form small cookies and place on a plate to refrigerate (placing a piece of parchment paper on the plate helps).

Can I use another flour type to make these cookies? My daughter has an allergy to tree nuts. I think the use of unsweetened coconut is a good idea. It is sweet enough without all the extra sugar. The honey is a special treat, but I suppose it helps hold the cookies together.
