You can make a caramel pie? I knew there was chocolate and even egg pie, but caramel? I had no idea at all. I can't wait to make this so I am headed to the store now since I have tomorrow off from work. It is going on my short list for holiday desserts.

Every year, my friend's family has a Thanksgiving pie contest with 1 ingredient every one must use and this year, it is caramel! I love this pie because it doesn't take up a lot of time or a lot of room in the oven (since it is semi-baked!) The layers look clean and appealing. I'd probably add something for texture, maybe some nuts or caramel chips!

This is a truly awesome recipe. It is so easy. My teenage son loves salted caramel which is what made me look at this pie. I never thought it would be so easy to make. I was very happy to see how easy it is. I will definitely be making it. I had a thought that as an alternative you could pile on some meringue (I often have left over egg whites - I have some right now in my fridge that I don't know what to do with) and blitz it under the broiler for 15 minutes. I think that would work. It works on a lemon meringue pie I make which is no bake and set in the fridge.
