Ingredients
- 2.5 cup flour
- 1.5 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 cup melted butter
- 1/4 cup vegetable oil
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 1 cup milk
- 8 ounce sugar-free baking chocolate or chocolate chips
- 1 cup Heavy cream
- 1/2 cup granulated sugar
- 1/4 cup +2 Tablespoon heavy cream
- 1/8 teaspoon sea salt
- 1/2 cup chopped peanuts
-
First, preheat your oven to 425 degrees and prepare a donut pan with nonstick cooking spray. Set pans aside.
-
In a medium-sized mixing bowl, whisk together the flour, baking soda, baking powder, and salt until combined.
-
In a larger bowl, add the oil and butter and whisk them until smooth
-
Slowly add the sugar, vanilla, and eggs to the butter mixture and continue whisking until well combined.
-
Alternate adding the milk and the dry ingredients into the large mixing bowl, gently mixing until just combined.
-
Add the batter to a large Ziploc bag or piping bag and cut the corner of the bag large enough to pipe into the donut pans.
-
Pipe the batter into the prepared pans, filling it 2/3 of the way full.
-
Bake the donuts in the prepared oven for 8 minutes or until the tops of the donuts are slightly golden.
-
Let the donuts cool in the pan for about 10 minutes, then remove them to a wire rack.
-
While the donuts cool, you can make your salted caramel. First, add the sugar to a saucepan over medium heat.
-
Continually stirring, cook the sugar until it turns a dark amber color and begins to liquefy.
-
When the caramel starts to liquefy, remove the pan from the heat and add in butter. Stir until melted and combined.
-
Transfer the caramel sauce into a heat-safe bowl to cool fully.
-
Next, you can make a quick ganache by heating your cream in a saucepan just until it begins to simmer.
-
When it begins to simmer, quickly remove it from the heat, add in the chocolate, and cover the pan with a lid.
-
Let the mixture sit for 5 minutes.
-
Remove the lid from the pan and stir the mixture until it's smooth and shiny. Set it aside to cool and thicken.
-
Now it's time to assemble! Dip each donut in the ganache and place them on a wire rack.
-
Chill the donuts for 15 minutes in the fridge.
-
Remove the donuts from the fridge and dip the donut again in the salted caramel.
-
While the donuts are freshly dipped, sprinkle the salted peanuts right on top and enjoy.
