Three Ingredient Paleo Chocolate Truffles
"Need a chocolate fix? Try these Three Ingredient Paleo Chocolate Truffles for a creamy and delicious two-bite treat. Made with coconut cream for a rich, paleo, vegan chocolate candy.What’s the deal with paleo chocolate you ask? Well, first off I am not strictly paleo, but I do try to avoid dairy and extra sugar when possible. It just makes me feel better. Paleo chocolate needs to be dark, dairy free and have as little sugar as possible. These Three Ingredient Paleo Chocolate Truffles are only sweetened by the freeze dried strawberries on the outside and that works great. Try to find a dark chocolate (at least 75%) and make sure it’s dairy free and has very little sugar."
Serves12 Truffles
Ingredients
- 1 can coconut cream (not coconut milk)
- 8 ounces vegan, paleo-friendly chocolate, chopped (85% dark chocolate)
- 1 tablespoon maple syrup
- crushed freeze dried strawberries

Pour coconut cream into a pan over medium-high heat and whisk to combine.

Heat until it starts to boil around edges.

Add chopped chocolate and continue to whisk. Remove from heat.

Add maple syrup.

Place in refrigerator and allow to chill at least a few hours.

When completely chilled, use a mini melon scooper to make even sized balls. Roll into a round shape.

This is a very interesting paleo recipe! I am not sure how appealing these look since they're red. Perhaps, the crushed freeze dried strawberries would be better as an ingredient and then they could be dipped in some extra of the vegan, paleo-friendly chocolate? I think the chocolate color would look more appetizing! Any other topping/coating suggestions?
