Traditional Swedish St Lucia Saffron Buns lussekatter

"Lussekatter, the Scandinavian saffron infused S-shaped rolls, beautifully adorned with two raisins at the curls. Since, no celebration would be complete in Sweden without a bun. These buns are baked on the 13th of December to celebrate St. Lucia day “the festival of light. Normally, young girls wear white gowns and candle-lit wreaths and serve the buns to the rest of the family. I was introduced to this tradition when I was in Sweden. We used to gather at work and enjoy those delicious buns with a cup of coffee. Not to forget the Swedish art of “Fika”. As usual, I prepared these buns with some healthy swaps to enjoy them without guilt."
