"Seasonal pickle twist on Jerry Thomas' 1876 recipe for a 'gin fiz' using a pink lady apple shrub infused with star anise, strawberry gum and cinnamon myrtle, gin, agave syrup and soda water, garnished with an apple wheel or apple fan. Apple shrub gin fizz cocktail is a crisp, refreshing apple and spice cocktail that celebrates pink lady apple season. The 'fiz' was used as a 'pick me up' for curing hangovers. Using a shrub syrup drinking vinegar in this recipe allows for additional flavour and importantly the element of spice to be added to the drink - the fiz is closely related to the sour and to much older style vintage punch recipes that included sweet, sour, strong, weak and spice elements.
