Creamy Coconut Salmon Curry
"Salmon in a homemade curry sauce is delicious. This salmon curry is a delicious fish recipe if you are craving some curry soup. It is simple and very quick to cook. A delicious curry for a healthy lunch or dinner. If you prefer, you can leave the whole salmon fillet uncut, salt and pepper them and bake them. You can also use cod fillets or any white fish in this recipe too. Moreover, you can add ground mustard seeds to elevate the curry flavor. "

Ingredients
- 1 lb salmon fillet
- 1 tbsp brown sugar
- 1 tsp curry powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 2 tsp olive oil
- 1 tbsp olive oil (Coconut curry sauce)
- 2 cloves garlic (Coconut curry sauce)
- 1 oz ginger (Coconut curry sauce)
- 1 oz lemongrass (Coconut curry sauce)
- 1 tbsp brown sugar (Coconut curry sauce)
- 1 tbsp red curry paste (Coconut curry sauce)
- 4 oz coconut milk (Coconut curry sauce)
- 2 tbsp fish sauce (Coconut curry sauce)
- 1 lime (Coconut curry sauce)
- Salt and pepper to taste (Coconut curry sauce)
Instructions

Preheat the oven to 475 degrees Fahrenheit

Line a baking sheet with baking paper.

For the Salmon: Mix the spices and the olive oil to make a paste/rub for the salmon.

Place the salmon skin-side down on the baking sheet.

Rub the paste liberally over the top part of the salmon.

Bake for 10 minutes and remove it from the oven.

For the coconut curry sauce: Heat the olive oil over medium heat.

Add minced garlic, chopped ginger, and chopped lemongrass; sauté for 5 minutes.

Add brown sugar and curry paste.

Sauté for 3 minutes.

Add coconut milk.

Season with salt and pepper to taste.

Add the salmon fillet to the sauce and baste for 2 minutes before serving.
