Salmon With Sunflower-dill Pesto Sauce

Ingredients
- 3 cups sunflower seeds
- 3 cups basil leaves
- 3 tablespoons fresh dill
- 1 tablespoon green onion
- 1 clove garlic
- 1 tablespoon lemon juice
- 2 teaspoons olive oil
- 2 salmon fillets
- sea salt and pepper to taste
- Sunflower seeds and dill
Instructions

Preheat the oven to 320°F temp.

Blend sunflower seeds, dill, basil leaves, lemon juice, garlic and olive oil in a blender until a smooth and creamy Pesto.

Season the skin of Salmon fillet with a pinch of salt and pepper. Heated the oil in a frying pan. Sear the salmon for 3 minutes on each side.

Cook the salmon in the preheated oven for 5 minutes.

Serve the salmon with the pesto sauce on top. Garnish with few sunflower seeds and dill over the top and enjoy.
