Oh my. I am going to be in big trouble now. Why you ask? Well, my daughter is a huge mint chocolate chip ice cream fan, so this mousse will be the only thing she wants to see in the refrigerator every weekend when she comes home from college. She is planning to stay the next two weekends to study for finals, so I can try it out and see what happens with it to make sure it turns out perfect when she does come home. Plus, I want to get the seconds.

I love Oreo Mint Cookies as well as mint chocolate ice cream, so this recipe is a true must-try for me. It seems like it would be perfect for serving at a Kentucky Derby viewing party. I might try adding some crme de menthe instead of the mint extract called for in the recipe to give it an added adult touch. For kids, I'd leave the recipe as written.
