It's been a very long time since I heard of a grasshopper pie. I am so glad you posted this recipe. Do you think it would hurt to put a quarter of a block of cream cheese in the recipe? I love the cream cheese and mint flavors together in a cold dessert like this one.

I like collecting no-bake recipes and this one looks like it may well get a workout soon. It's been ages since I had grasshopper pie, and this is an easy to make version, perfect for the summertime or while watching the Kentucky Derby. I am not actually a fan of mint-flavored foods or desserts but many of my family members are and I think they would absolutely love this yummy grasshopper pie! I especially like the tips about how this would be a great addition to a Saint Patrick's Day party. Very festive color and a unique taste!
