German Farmer's Breakfast
This dish is also known as Bauernfruhstuck, but we'll just call it German Farmer's Breakfast. This morning skillet recipe is an all-in-one complete breakfast meal. Potatoes, eggs, bacon, ham and more go into this hearty meal, making enough to feed even the hungriest farmer. The traditional German breakfast is a delicious way to start your morning, and you'll leave the table full and satisfied. You can even serve this meal for lunch or supper!
Ingredients
- 4 potatoes
- 4 bacon strips, chopped
- 3 eggs
- 3 tablespoons milk
- 1/2 teaspoon salt
- 1 cup ham, cubed
- 2 medium tomatoes, peeled
- 1 tablespoon chopped chives
Instructions

Boil unpeeled potatoes for 30 minutes. Rinse under cold water, peel and set aside to cool. Slice potatoes.

In a large frypan, cook bacon until transperent. Add the potato slices; cook until lightly browned.

Meanwhile blend eggs with milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges; add to the egg mixture.

Pour the egg mixture over the potatoes in the frypan. Cook until the eggs are set. Sprinkle with chopped chives and serve at once.

This is a great breakfast or brunch for a crowd! Boil one medium potatoe per person. (the night before, if you can...) 0ne slice of bacon per person, 1 egg...etc. Only thing missing...onions! (half an onion per person, or so. Fry right along with bacon in the same pan. ) Very hearty!
