German Spekulatius
Ingredients
- 125g. butter
- 150g. sugar
- 1 egg
- 1 tsp cinnamon
- 50g. ground haselnut
- lemon zest (to taste)
- 275g. flour
- 1 teaspoon baking powder
Instructions
(a traditional Christmas spice cookie). Beat butter until light and creamy. Blend in sugar, cinnamon, egg, hazelnuts, zest, flour and baking powder. Mix well and roll out (very thin). Cut into shapes with cookie cutters (or Spekulatius form, if you find one...). Place cookies on greased cookie sheet and bake at moderate temperature (try 350F, maybe less) until light brown and crisp. These cookies should be very thin, crisp, and evenly browned.
