Chestnut and Mushroom Stuffing
"Chestnut and mushroom stuffing for turkey, chicken or goose, with ground pork and wild dried mushrooms. The best stuffing is with proper minced pork, with cooked chestnuts and dried porcini or cep mushrooms. 'Stuffing' is really a misnomer. You should NOT stuff the turkey. The stuffing will cook better and quicker all alone and so will turkey, with perhaps just an onion or an apple in the cavity for company. I usually use the throwaway foil trays to cook my stuffing, then turn it out onto a tray next to the turkey - and it usually disappears faster than the bird..."
