Layered Polenta Casserole
"A Casserole dish prepared with Polenta meal and layers of tomato sauce. Polenta is the Italian version of grits. Polenta is deep yellow in color and cooks really fast within minutes. I create this layered casserole dish to pep up our dinner menu plan. You can create variations of this dish by adding ingredients and flavors such as chicken, shrimp and even leftover ham from your holiday celebrations. I like mine just with polenta and tomato sauce and sometimes I like to add mushrooms as well for a change. The best part, of course, is the baked cheese layer over the polenta casserole!"
