Lamb Chops
Ingredients
- 4 lamb chops, 1 1/2" thick
- 1 cup cashews ( pulverized in a food chopper)
- 1/8 tsp ground cloves
- 1 Tbsp crushed garlic
- 1 Tbsp Italian bread crumbs
- 1 egg with 2 Tbsp milk for a wash
- 1/8 tsp cayenne pepper
- 1/4 cup peanut oil
- 4 Swiss cheese slices
- 1 red onion, sliced
- 1 red bell pepper, sliced
- anchovy fillets, optional
Instructions
In a heavy skillet heat the oil until almost smoking. In a separate dish mix cashews, cloves, bread crumbs, pepper. Dip the lamb chop into egg wash then into dry mix. Place into hot skillet for 1 minute per side, then remove and place on a broiling dish. Top with the rest of the ingredients (cheese goes on first) and end with the anchovy. Broil in the broiler for about 12 minutes. Serve hot.
