Meatloaf with Chilli Sauce
"I really do have a love affair with meatloaf lately. Maybe it’s because they are so easy to make. You mix all of the ingredients in a bowl, shape it, and bake it! Simple, yes? Or maybe it’s because you can change the flavours every time you make it! Meatloaf is truly versatile in terms of flavour, that’s what makes it my to go meal. I can use different types of ground meats, and adding different veggies and spices, and making a different glaze, you get a new version of meatloaf every time! This meatloaf will also make its way on my holiday table this year. It makes the perfect non traditional Christmas dish, and any leftover is as good reheated or served cold between 2 slices of a French baguette!"

Ingredients
- (1-pound) ground beef
- (1-pound) ground pork
- 3 cups panko bread crumbs
- 1 carrot (shredded)
- 1 small onion (finely diced)
- 1 egg (beaten)
- 1 cup chilli sauce
- 2 teaspoons chilli sauce
- 1 teaspoon dry mustard
- Salt and pepper to taste

In a large bowl mix all of the ingredients (except for the parsley)

Press the meat mixture into a loaf dish.

Pour half of the glaze onto the top of the meatloaf.

Cover with aluminium foil and bake in a preheated oven at 375F for 45 minutes.

Uncover, then pour on the remainder of the glaze and return to the oven uncovered and continue baking for 25 minutes or until internal temperature reach 170F.

Garnish with the parsley.

I've never thought of adding chili sauce to meatloaf but it would pair perfectly together!
