Porcupine Meatballs
"This is a recipe that my grandma used to always make, I loved helping shape the meatballs when I was a kid. Now I make the Porcupine Meatballs for my family and it’s definitely a favorite. One of the things I love about these Porcupine Meatballs is how easy they are to make and with just a few simple ingredients that I usually have on hand I can make them just about anytime I want. When I was a kid I thought Porcupine Meatballs got their name because they were made from Porcupine, imagine my relief when I found out that wasn’t the case. These little meatballs got their name because the way the rice sticks of as they cook, makes them look like a porcupine."
