Frijoles Refritos Refried Beans

Ingredients

  • 500 grams dried pinto or pink beans
  • About 5 cups water to cook, 10 cups for overnight soaking
  • 1 or 2 onions diced
  • 1/2 to 1 cup hot bacon drippings, butter, margarine or lard

Instructions

Wash and drain beans. Combine beans in a large pot with water and onions. Soak overnight or bring to the boil, cover and let cool for 1 hour. Return to heat, bring to boil, cover and simmer till beans are tender ( about 3 hours). Drain and mash beans with potato masher, adding bacon drippings or butter etc. Mix well and continue cooking and stirring till beans are thickened and fat is absorbed. Add salt to taste. Serve hot. Recipe keeps well when refrigerated.
