It's the evaporated milk that makes the eggs so delicious and fluffy! If you only have regular milk, wait to make it until you can get the evap milk. Usually you only hear of fried chile rellenos, but this is better. After it cooled, I cut it into squares and froze some to take for my lunch at work. I like breakfast for dinner, but even if you don't, this is more like a Mexican dinner, especially if you add some pinto beans and pink rice on the plate. I garnished with cilantro, too.
