Blender Pancakes
Ingredients
- 1 egg
- 1 egg white
- 1 1/2 cup plain low-fat yogurt
- 3 Tbsp vegetable oil
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup old-fashioned rolled oats
Instructions
Makes 4 servings.. Combine the egg, egg white, yogurt and oil in blender; whirl until smooth. Add the flour, sugar, baking powder, baking soda and salt; whirl to blend. Add the oats; whirl briefly just to mix. Heat a griddle or large skillet over medium heat. Lightly brush with vegetable oil. Spoon about 3 tablespoons batter for each pancake onto griddle. Cook until bubbles form on top, 2 to 3 minutes. Flip over; bake until browned, about 2 minutes. Keep warm until all pancakes are cooked. Serve the pancakes with maple or fruit syrup.

We love this recipe. we used 2 tablespoons Splenda brown sugar blend, and it tastes wonderful. And how simple a recipe. For a single recipe used 2 medium eggs, for a double recipe used 3 large eggs. Works wonderfully. It has become a family favorite.
