This is one of those recipes that is just so delicious, you would never guess it was so easy to make. We all love this recipe. There is so much flavor in these potato pancakes. We have them with breakfast, but sometimes, if I have leftover mashed potatoes, we have them with dinner! It is a great last minute side. These go great with almost anything. Actually, I don't think I have found anything that these don't go with. Definitely one of my favorites!

You may think I'm crazy, but I am so glad to find this St. Patrick's Day Potato Pancake recipe. I always knew that egg and flour would be part of the ingredients, but never knew in what proportions. That has lead to many potato pancake disasters. Imagine my joy when I finally was able to make a delicious potato pancake, that held together and fried up beautifully. Thank you so much for this recipe.

This is the way I make my potato pancakes. I usually put onion or green onion in mine. I have also made it with left over hamburger patty, pork chop or what ever you would like to add to it. They are delicious as a snack, hot or cold. Yum.

This is a great addition to my St. Patrick's Day menu plans. I've been stuck after corned beef and cabbage. This will be a great way to start that celebration day. I will be hoping mine come out looking like yours.
