Welsh Cakes
Ingredients
- 2 c flour
- 1/4 c margarine
- 2 tsps baking powder
- 1 tsp nutmeg
- 1/2 tsp cinnamon
- 3/4 c sugar
- pinch of salt
Instructions
(Picau ar y maen). Sift together dry ingredients. Cut in margarine until mixture resembles bread crumbs (approximately!). Toss with 1/2 c currants (you could substitute raisins if needed). Beat 2 eggs lightly. Add 2 tbsp milk and add to dry ingredients. Mix to stiff paste (dough). Roll on floured board 1/4" thick. Cut into 2" rounds. Bake on lightly greased griddle (about 325-350 deg) until golden brown and edges are firm, turn once and cook other side.
