What a nice, quick and easy dinner recipe! Feel free to use any greens like spinach, kale, or even broccoli rabe (if you have the taste buds to handle that!) I love butternut squash and have even used it pureed in place of excess cheese in a mac and cheese dish! It is so creamy and flavorful.
