Angel Hair with Broccoli, Pine Nuts, Tomatoes & Garlic
Ingredients
- 2 tablespoons garlic-flavored olive oil
- 6 cups bite-size broccoli florets
- 1/4 cup pine nuts
- 4 cloves garlic, crushed or minced
- 1/3 cup water
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 teaspoon crushed dried basil leaves
- 1/2 teaspoon crushed dried oregano leaves
- 1 cup sliced Roma tomatoes
- 12 ounces angel hair pasta
Instructions
Serving Size : 3. Heat olive oil in 12-inch skillet. Add broccoli and pine nuts. Saute for 7 minutes, or until pine nuts are lightly golden. Add garlic, water, salt, cayenne pepper, basil and oregano. Cover and cook for 3 minutes. Add tomatoes. Cover and cook for 2 minutes, or just until tomatoes are heated through. Meanwhile, cook pasta in boiling, salted water according to package directions to al dente. Drain. Arrange pasta on individual serving plates and top with broccoli mixture, or add pasta to broccoli mixture in skillet, tossing gently. Serves 3 to 4.
