Talk about carb overload! Pasta and potatoes in the same dish. This certainly is a comfort food for those cold winter nights which is exactly what we are experiencing here in South Africa at the moment. I think this looks like a great recipe to make over the weekend. I would do it in two batches. Make the chicken first and reserve the liquid then on another night and to save time finish it off. Would that work?

This recipe looks very traditional, and aside from being Amish, also resembles something a friend's great grandmother used to make, who was German. She used dried spaetzle noodles instead of the egg noodles. I have never seen Amish style thin egg noodles around where I live, but thought about using those frozen homestyle noodles instead. Since it is so frugal and economical, it reminds me of some of those great depression era recipes as well.

Oh my, this looks so delicious! I love how the noodles are cooked in the chicken base and butter, along with the chicken(oh yes, I would add butter!). The noodles would definitely be infused with all that goodness. You could probably also use a pressure cooker to cook the chicken. I would add a little chicken base and butter to the chicken while it is cooking.
