Ingredients
- 2 cups flour, plus extra for rolling
- 1 teaspoon kosher salt
- 3 large eggs
- 1 teaspoon olive oil
- 1 teaspoon water

Instructions

In a food processor fitted with the blade attachment combine the flour and salt. Pulse a few times to combine.

Add the eggs, olive oil and water to the flour mixture and process for 30-60 seconds.

If the mixture appears dry add a bit more water until the dough comes together in a ball.

On a lightly floured surface knead the dough until smooth.

Place in a bowl and cover with plastic wrap. Rest at room temperature for at least 30 minutes.

On a floured work surface roll the dough out as thinly as you can.

Using a very sharp knife cut the dough into pasta noodles. Place the noodles onto a baking sheet lined with parchment paper and lightly floured.

Cook the pasta in a large pot of salted boiling water for 2-3 minutes depending on the thickness of the noodles.

Drain, dress per your preferences, and serve with your favorite sauce.

My all-time favorite food to make from scratch has got to be flour tortillas. The aroma alone is enough of a reason for me but honestly, that first tortilla made and then adorned with melty butter so that it oozes everywhere is what I look forward to the most. I still remember when I was a kid watching my grandmother make them and the excited feeling I would get knowing I was going to get the very first one.

My absolute favorite thing to make from scratch is my homemade tomato all - purpose sauce. I use it for pasta, pizza, as a soup base, and in casseroles. I grow my own organic heirloom tomatoes in the summer just so I can make a lot of this sauce to use in the fall and winter months.

I love making cookies, muffins and banana bread from scratch. My husband loves making homemade bread. I showed him this pasta recipe and it is now on his "to do" list. Yay

Omg, I've always wanted to make my own pasta but every time I thought about it, I was so confused about all of the tools and gadgets I would need to do so...I just went out and bought it instead. There's nothing like homemade pasta...especially in soups, but I'm wondering do you have to use it right away or can it be frozen for later use and can it be dried?

Making homemade pasta always seems way too intimidating to me, but if they all taste like this, I think I can get on board. It was hearty and filling, and I went back for seconds. Loved this dish.
