Poor Man's Macaroni and Cheese

Whoever said that macaroni and cheese had to be complicated? Poor Man's Macaroni and Cheese is simple and tasty. This budget saver uses ingredients that you already have in your home and is an easy macaroni and cheese recipe.

Ingredients

  • 16 ounces package of elbow macaroni
  • 4 cups shredded cheese, your choice
  • 2 cups milk
  • 3 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cook macaroni according to package instructions.
     
  3. Grease casserole dish.
     
  4. Drain macaroni and place a thin layer in the dish. Sprinkle cheese over the macaroni.Continue layering macaroni and cheese until you've reached the top of the casserole dish.
     
  5. Mix eggs and milk, salt, pepper and spices. Evenly pour egg/milk mixture over macaroni and cheese. Press down a little more to get everthing to settle. Sprinkle a tad bit more cheese on the top of the egg milk mixture.
     
  6. Bake in the middle rack of the oven for 45 minutes.

I love mac and cheese. I also love how there are so many ways to fix it. This one is the easiest that I have found. It cooks up into this amazing dish. We didn't even leftovers of this. I will be adding this to my regular menu. Also, I added some different cheeses. In the different layers, I added varieties of cheese, so this ended up being a 3 cheese mac and cheese. It really was delicious.

I love to eat macaroni and cheese, especially homemade. I appreciate that this recipe does not require heavy cream. This makes the dish somewhat healthier and lighter. When boiling the macaroni, you will want to drain the pasta much earlier than the directions since it will be baked for 45 minutes. Otherwise, the macaroni will be very soft and overcooked.

I can't wait to try this, only thing is cheese is not cheap! Four cups in my area will run you about $6! Maybe if there is a sale I will try it.

This recipe is pretty good, with one major flaw - there is WAY too much pasta. You will end up with mostly dry pasta and very little cheese/cheese sauce. Instead of 16oz pasta, you want to use 8oz pasta. This brings the mac and cheese to a more traditional cheese level.

I was looking for a recipe of Mac & Cheese that called for a tsp of dry mustard. Do you have other Mac & Cheese recipes??
