Red Onion Dressing & Snack Dip
"Red onion dressing makes so much sense the minute you think about it. It combines so many delicious things and it’s so easy! Why are we not eating this more?? I’ve decided to remedy this situation, and keep some on hand at all times. Like all good things, this recipe came directly from my mom. She brought me a jar and it was gone in less than a week. I immediately requested the recipe because I had to have more. It’s evolved a million different ways for a million different occasions. You can use it to dress your favorite salad, or dip fresh veggies in it for a snack. That’s what’s so great about it. You can tweak it to make it your own!"
NotesAlternative: If you don't have a blender or food processor: Finely mince the red onion. Whisk all ingredients together in a large bowl.
Ingredients
- 1 medium red onion, rough chop
- 1 clove garlic, minced
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 1 teaspoon celery seed
- 3 teaspoons dijon mustard
- 1/3 cup white or red wine vinegar
- 3/4 cup oil (vegetable or olive oil)

Combine all ingredients in a food processor and process until desired texture is achieved.

I have tried Vidalia onion dressing, but I have never heard of Red onion dressing. I will definitely put this on my list for summer dressings. We have about 50 red onion seedlings going now, and I think this will be perfect for them. Does anyone think I could substitute apple cider vinegar for the wine vinegar? I don't usually have red or white wine vinegar in the house.
