Sausage Stuffed Jumbo Shells
These stuffed jumbo shells are packed with hearty sausage and crisp broccoli to create an unbeatable meal. This is a great dish for potlucks, holidays or just a regular weeknight meal.
Ingredients
- 24 large shells
- 3/4 cup 1% lowfat cottage cheese
- 1/3 cup shredded mozarella (part skim)
- 1/4 cup parmesan
- 10 ounces frozen, chopped broccoli
- 2 teaspoons green onion, minced
- 1/4 teaspoon lemon pepper
- For Sauce:
- 16 ounces can tomatoes w/ juice
- 8 ounces can tomato sauce
- 1 tablespoon (heaping) tomato paste
- 1/2 pound hot sausage
- 1 clove garlic, minced
- 1 teaspoon rosemary
- Pepper
Instructions
- Preheat oven to 350 degrees F.
- Thaw and drain broccoli.
- Broil sausage, remove casing and break up.
- Make sauce by combining tomatoes, tomato sauce, tomato paste, cooked sausage, garlic, rosemary, and pepper in a large pot and cooking until heated through.
- Cook shells and drain.
- Combine broccoli, cottage cheese, mozzarella, parmesan, green onion, and lemon pepper and stir well. Stuff shells with mixture.
- Arrange shells in greased casserole baking dish. Bake 15 minutes at 350 degrees F, or until heated through. Top with sauce.

What exactly goes into the stuffing? Everything except the tomatoes, tomato sauce, tomato paste? Thanks.
