Tomato and Eggplant Pasta Bake
"Pasta al forno with eggplant and tomato sauce - or aubergine pasta bake on the other side of the Atlantic. Tomato sauce is the simplest, homemade sauce made from good tinned tomatoes. When I want to make pasta al forno I will usually throw the chunky shapes into sauce – fusilli, penne, rigatoni, conchilie – decadently add some extra mozzarella or asiago and bake until crispy on top. The recipe below uses fusilli – the sauce clings to those twisty numbers beautifully."

Eggplant (also called aubergines or brinjals here in South Africa) are so versatile and my favorite way of eating them is with an Italian tomato sauce like in this recipe. We did not have any mozzarella so used a mix of cheddar and emmentaler cheeses. It is a very nice meal and we all voted to have it again soon.
