Warm Salmon Pasta Salad

Ingredients
- 2 cups whole wheat bow-tie pasta
- 1 red apple diced
- 2 cans (6-ounces) Sockeye salmon, broken into bite-size pieces
- 1 cup celery, sliced
- 3 green onions, diced
- 1 small zucchini, trimmed and diced
- 1 yellow pepper, seeded and diced
- 1 cup frozen baby peas
- 1/4 cup walnuts, coarsely chopped
- For Curry Vinaigrette
- 1/2 cup canola oil
- 1 tablespoon lemon juice
- 2 teaspoons curry powder
- salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain well.
- In a salad bowl, combine pasta, apple, salmon, celery, green onions, zucchini, yellow pepper and baby peas. Set aside.
- To prepare the vinaigrette: In a small bowl, combine canola oil, lemon juice, curry powder, salt and pepper. Heat for 30 seconds in microwave.
- Pour vinaigrette over salad and toss lightly. Garnish with walnuts. Serve immediately.

This salmon salad looks really delicious. It is so healthy, just up my street. I like the use of curry powder in the dressing and I'm looking forward to tasting that. There is such a lot of vegetables in this salad and I like the way apple is added. I am also a big fan of nuts in a salad so am really going to enjoy this one.
