Weeknight Pasta with Salami

Ingredients
- 1/2 cup salami, chopped
- 1 pound penne pasta
- 2 tablespoons Parmesan cheese, grated
- 2 teaspoons olive oil
- 2 medium onions, sliced into half moon shapes
- 1 garlic clove, chopped
- 1 teaspoon light brown sugar
- 2 tablespoons basil, chopped
- 1/4 cup flat leaf Italian parsley, chopped
- 3 cups crushed tomatoes
- 1 pinch chilli flakes
- salt and pepper, to taste
Instructions
- Cook pasta in salty water as directed on the package or to al dente state.
- On medium-high heat fry salami until crisp.
- Take out the salami and add chilli and onion to oil. Fry onion until caramelized.
- Then add garlic, half of the herbs, crushed tomatoes, sugar, salt and pepper.
- Lower the heat and simmer the sauce for 5 minutes or until slightly thickened.
- Remove from the heat and add pasta, rest of the herbs and half of the crisp salami.
- Plate the pasta and sprinkle parmesan cheese on top.
