Bubble Pizza

I replaced half of the ground beef with Italian sausage (hot or sweet), and I found that making my own drop biscuits (from Bisquick) to which I added minced garlic, oregano, and parsley (about 2 cloves garlic, 1 teaspoon oregano, and 1 tablespoon parsley) tasted even better.

Ingredients
- 2 cans buttermilk biscuits
- 1 pound lean ground beef
- 1 can (15-ounces) pizza sauce
- 2 cups shredded mozzarella
- 1 cup shredded Cheddar
Instructions
- Pre-heat oven to 400 degrees F.
- Separate tube of biscuits into individual biscuits and cut each circle into quarters. Coat a 13 x 9-inch pan with non-stick spray. Spread the quartered biscuits evenly across the bottom of the pan.
- Brown ground beef in large skillet; drain. Mix in pizza sauce.
- Spread the sauce mixture over the biscuits. Bake for 25 minutes. Top with the cheeses and return to oven. Bake an additional 5-10 minutes or until cheese is melted and bubbly. Let stand 5 minutes before serving.

I've never heard of Bubble Pizza but this reminds me of the pizza we used to make when we were camping! Simplified ingredients and a casserole style pizza make this a great make-ahead or easy weeknight meal. You could add in extra veggies or use chopped up pepperoni instead of the ground beef. This would be a great dish to bring to a potluck or shower as well!

This is a great recipe. You can jazz it up with other toppings also. It's also fun to make with your kids. If they're old enough they can help divide the biscuits ( I use kitchen shears). Try it - I bet you & the kiddos will really like it!
