Calzones
Ingredients
- 1 tablespoon yeast
- 1 cup warm water
- 1 tablespoon sugar
- 2 1/2 tablespoons olive oil
- 2 1/2 cups flour
- 1/2 cup corn meal
- 1 teaspoon salt
Instructions
Dissolve yeast in water; add sugar. Let set until foam appears. Add oil. Mix flour, corn meal, and salt. Add gradually to wet ingredients, mixing well before adding anymore. Once you cannot stir anymore, dump out onto a floured surface. Knead remaining flour into mixture. Let rise in a bowl until doubled. Punch down and divide into 6 parts. Roll each into an 8-inch round. Add filling and fold over. Crimp edges with a fork. Prick tops and sprinkle with corn meal. Bake on a cookie sheet at 425 degrees for 18 - 20 minutes. Note: I found that these were too big; maybe divide into 8 parts.
