Homemade Snack Pizzas

"It’s May and I am totally over packing lunch for Evan every day. He hates sandwiches. Meat and cheese don’t work because they get “warm” and “icky”. I use quotations because my ice packs say this isn’t true. I may have found a secret weapon, though…Snack Pizzas! I made these with things I keep on hand in the pantry every day. They take a bit of time but most of it is waiting time, not hands-on time. Plus it makes 12 so you can throw them in the freezer and have lunch box food on hand with no effort at all! Just throw them in and they are thawed in time for lunch. Easy peasy!"
