These remind me of mini-stuffed pizzas. This is a delightful idea that I need to try. I love making quesadillas, and I had never thought of constructing them quite this way. I can easily see adding some bacon or pepperoni to the ingredient list. I was happy to see peppers and onions in the ingredients, since they're two of my favorite toppings.

This looks like such a cool recipe! I can't wait to try it out. I want to add vegetables to mine as well and see how it turns out.
