Honey Soy Pork Ribs
"Pork ribs are one of my favourite things to eat during the summer months. I don’t know if I’m the only one, but a good rack of ribs just screams Summer to me! Like chicken, pork ribs are a very good vehicle for flavour. Pork ribs have a mild flavour compared to beef, almost like chicken. I’m not saying that pork tastes like chicken, but the taste is milder compared to beef or lamb. Pork ribs taste a lot like pork chops, so they will take the flavour of any seasoning or marinade you use. You can make pork ribs in an almost endless variety of flavours. If you browse through my blog you will find a few examples of what I’m talking about, from smokey to sweet, from fruity to salty!"

Ingredients
- 2 racks of pork ribs
- Salt and pepper to taste
- 1 cup honey
- 3 tablespoons soy sauce
- 2 tablespoons chilli garlic sauce
- 1 tablespoon butter
- 1 teaspoon dry mustard

Remove the white membrane on the back of the ribs.

Salt and pepper both sides of the ribs to taste.

Place the ribs meat side down, on a piece of parchment paper.

Wrap with aluminium foil and place on a cookie sheet.

Bake in a preheated oven at 325F for 2 1/2 hours.

In a saucepan, mix all of the ingredients for the glaze.

Bring to a gentle boil, reduce heat and simmer for about 5 minutes.

Remove the ribs from the oven.

Brush the glaze on both sides of the ribs and return to the oven for 10 minutes.

Serve with rice and steamed vegetables.
