Marinated Pork Loin Roast

Ingredients
- 2 pounds boneless pork loin roast
- 2 cloves garlic, chopped
- 1/2 medium onion, chopped
- 1/2 cup soy sauce
- 1/4 cup dry vermouth
- pepper, to taste
Instructions
- Unwrap pork roast and stab all over vigorously with a fork on both sides. Mix garlic, onion, soy sauce and vermouth in useful container. Drop in pork roast, cover with pepper, and marinate covered overnight.
- Turn pork roast in the morning.
- In the evening, remove roast and remove any large bits, leaving pepper in place if possible. Insert thermometer and place on rack in pan, fat side up.
- Preheat oven to 450 degrees F.
- Place into oven, immediately lowering temperature to 350 degrees F. Roast until done as shown on thermometer. Slice and eat.
