    Marinated Pork Loin Roast

    Ingredients

    • 2 pounds boneless pork loin roast
    • 2 cloves garlic, chopped
    • 1/2 medium onion, chopped
    • 1/2 cup soy sauce
    • 1/4 cup dry vermouth
    • pepper, to taste

    Instructions

    1. Unwrap pork roast and stab all over vigorously with a fork on both sides. Mix garlic, onion, soy sauce and vermouth in useful container. Drop in pork roast, cover with pepper, and marinate covered overnight.
       
    2. Turn pork roast in the morning.
       
    3. In the evening, remove roast and remove any large bits, leaving pepper in place if possible. Insert thermometer and place on rack in pan, fat side up.
       
    4. Preheat oven to 450 degrees F.
       
    5. Place into oven, immediately lowering temperature to 350 degrees F. Roast until done as shown on thermometer. Slice and eat.
