Pork Meatloaf Stuffed Green Bell Peppers
"I was searching my pantry and refrigerator for ingredients to make a meatloaf, cause, you know, I was in need of comfort food. I came across this bag of green bell peppers that I had bought a few days ago and forgot in the back of the fridge (yes that happens to all of us). Luckily, the green bell peppers were still fresh, but I felt I had to use them now before they spoiled. I was still craving my meatloaf, so I came up with the idea to make little meatloaves inside the green bell peppers. The best of both worlds! Is it a meatloaf or a stuffed bell pepper? It’s both! Normally when making stuffed bell peppers, I would cook the stuffing separately, but since I was making meatloaf stuffed bell peppers, I’ve cooked the actual stuffing inside the bell peppers."

Ingredients
- 6 green bell peppers
- 1 pound ground pork
- 1 cup uncooked rice
- 1 small onion (finely diced)
- 2 cloves of garlic (minced)
- 1 egg
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon paprika

Cut out the tops of the bell peppers, remove seeds and white membrane, then set aside.

In a bowl mix all of the ingredients for the stuffing.

Fill each green bell pepper with the meat stuffing and reserve.

In your baking dish, mix all of the ingredients for the sauce

Spoon 1 tbsp of the sauce into each bell pepper on top of the meat stuffing.

Place the tops of the bell peppers back on each of them.
