Ingredients

  • 1 pound pork tenderloin, cut into four fillets/medallions
  • 4 slices provolone cheese
  • 4 cloves garlic, minced
  • 1 pound mushrooms
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons heavy cream
  • Salt and pepper, to taste
  • 4 ounces spinach leaves (optional)

Instructions

  1. Butterfly the pork tenderloin. This is a key step in getting perfectly shaped fillets.

  2. Cover pork with some plastic foil and pound with a meat tenderizer to ¼-inch thickness.

  3. Season the pork with salt and pepper.

  4. Cover pork with half of the minced garlic.

  5. Top the pork with provolone cheese.

  6. Add spinach at this point if using.

  7. Roll the pork into a roulade starting from the longer part.

  8. Secure pork seam with toothpicks or cooking twine.

  9. Heat half the olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned.

  10. Preheat oven to 375F. Transfer pork onto a baking dish and bake for 25 minutes.

  11. Prepare the mushroom sauce by heating the remaining olive oil in a skillet over medium-high heat.

  12. Add remaining garlic and cook until fragrant. Add mushrooms and a splash of water or chicken stock.

  13. Simmer for 5 minutes.

  14. Add balsamic vinegar and cook for an additional minute.

  15. Add heavy cream and continue to cook for 2 more minutes.

  16. Serve mushrooms in a plate. Half the pork roulades with a knife and serve on top of the mushrooms.

  17. Serve warm.
