Red Eye Gravy

Ingredients

  • ham slices about 1/4" thick
  • little vegetable oil
  • 4 Tbsp coffee liquid, very strong and black
  • 1 cup water

Instructions

Brown the ham slices on both sides. Remove from skillet and keep warm. To the drippings in the skillet (if there is too much grease, discard some of it) add the water and coffee. Bring to a boil to loosen the brown bits of ham-boil 2-3 minutes. Pour the gravy over ham, the gravy can also be served over grits.
