Egg Drop Curry
"Egg Drop Curry. Andhra-Style Poached Egg Curry is a simple, light, comfy, and delish side dish which fits so well with steamed rice or chapati. This gluten-free dish can be made in a single pan in less than 30 minutes. It doesn’t require boiled eggs, so you don’t need to worry about boiling the eggs first and then wait for them to cool down a bit before peeling the shells. For this curry, the raw eggs are directly dropped into the gravy instead of adding boiled eggs. Thus, this reduces the cooking time."

I have recently been getting into a lot of indian cuisine cooking videos online, but am very new to it. This recipe seems simple enough for me to try as I am a beginner with this style of cuisine, and many other recipes seem complicated. There are so many fresh flavors and exotic spices, that I am sure I would really enjoy it. I don't think it's a far stretch, but you could even serve this as a savory breakfast dish!
