Roast Pork Belly
Delicious roast pork belly with garlic, a hint of Oriental spicing and honey. Pork belly is popular but rarely cooked well. It’s either tough or burnt to a crisp, having been slammed in the oven like a baking potato. While it should ideally be boiled first or - like I’ve done - steamed in the oven under a foil tent. Only the last hour or so the proper roasting should take place. I think it's better than pulled pork - thanks to the fat layers it's meltingly tender and flavoursome.
