Ingredients
- 2 pounds thin-cut center loin pork chops
- non-fat cooking spray
- 1 can (14 ounce) stewed tomatoes
- 1/4 cup water
- 2 tablespoons tomato paste
- 1 can (4 ounce) chopped mild green chilies
- chili powder to taste
- 1 1/2 teaspoon ground cumin
Instructions
- Trim all visible fat from the pork chops.
- Spray large skillet with cooking spray and brown the chops over medium-high heat for about 2 minutes each side.
- Turn off heat. In a bowl mix together stewed tomatoes with juice (chop up small if necessary), water, tomato paste, chili powder, green chilies and cumin.
- Pour sauce over chops, distributing thoroughly, bring to a boil, cover and simmer on low for 25 minutes.
